KITCHEN PREPARE DADS FAVORITE DESSERTS.
 

SOME OF MY FAVORITE BBQ RECIPES
& DAD DESSERTS
 

GRILLED VEGETABLE SANDWICHES

Ingredients: 

4 (6 inch round) focaccia
1/4 cup mayonnaise
3 cloves garlic, minced
1 tablespoon lemon juice
1 small yellow squash, cut horizontally into 3/8 inch
thick slices
1 small zucchini, cut horizontally into 3/8 inch thick slices
1 medium red onion, cut into 1/2 inch thick slices
1 red bell pepper, cored and cut into 1/2 inch thick rings
1/2 cup crumbled feta cheese
1/8 cup olive oil 
 

Directions: 

In a small bowl, combine mayonnaise, minced garlic, and
lemon juice. Set sauce aside in the refrigerator 

Preheat the grill for high heat. 

Brush vegetables with olive oil on each side. Brush grate with oil. Place bell pepper and zucchini pieces closest to the middle of the grill ,and set onion and squash pieces around them. Cook for about
3 minutes, turn, and cook for another 3 minutes. The pepper may
take a bit longer. Remove from grill, and set aside. 

While the vegetables are cooking, cut foccaccia into 4 slices.
Spread sauce evenly  over top, and sprinkle with feta cheese.
Place on the grill, and cover with lid for about 2 to 3 minutes.
Watch carefully so the bottom doesn't burn. This will warm 
the bread, and slightly melt the cheese. Remove from grill,
and layer two pieces with vegetables. Cover with remaining bread.
Serve warm. 
                                                                           Makes 2 servings

 GRILLED BEEF KABABS

1/4 c  Lemon juice
2 tb Worcestershire sauce
3 tb Corn oil
1/3 c  Soy sauce
2 tb Yellow mustard
1    Clove garlic,minced
1 1/2 lb Lean round steak,boneless
1    Large green pepper
4 oz Fresh mushrooms
8    Cherry tomatoes
1    Very large onion

Make marinade by combining lemon juice,Worcestershire sauce,oil,
soy sauce,mustard,garlic.Cut beef into 1" chunks,then put in marinade.Cover and  marinate in refrigerator for 12 hours or more...
Cut vegetables into chunks,making at least 8 pieces of each.
Remove beef cubes from marinade,reserving marinade...
On 4 medium or long skewers,alternate pieces of meat and
vegetables.Grill over hot coals,basting occasionaly with
marinade,for about 15 minutes,turning shewers regularly.
(Allow 5 to 10 minutes longer for well done meat.).Serve hot.
Makes 4 servings

NETTIES OWN - Cheese Cake

3 Eggs
2 teaspoon of vanilla
2 packages of cream cheese, softened
1  cup of sugar, seperated
1 Tablespoon corn startch
2 Tablespoons (heaping) Ricotta cheese
1 16 0z. container Sour cream
1/2 pint whipping cream

For the CRUST
1 1/4
1 1/4 cups graham cracker crumbs
1/3 cup melted Butter
1/4 cup sugar
 

For the crust: Combine crumbs, sugar and butter. Press onto bottom and 1 1/2" up
sides of a springform pan ; set aside

For filling: In Bowl, with electric mixer at high speed, beat cream cheese,
                     sugar and vanilla until creamy. Beat in Eggs one at a time.
Gradually add the remaining filling ingreds., Mixing well after
each addition.
Spread into prepared pan.

Bake at 350 degree for 60-70 minutes, or until center is set
Turn off oven , leave door ajar, leave cheesecake in oven for
one hr.

Remove from oven; cool completely. Chill for several hrs or overnight...
BBQ RIBS

Ingredients: 

4 country-style pork ribs (approximately 2 1/2 pounds)
water to cover
1 tablespoon garlic powder
1 teaspoon ground black pepper
2 tablespoons salt
1 cup barbecue sauce

Directions: 

Place ribs in a large pot and add enough water to cover. Season with garlic powder, black pepper and salt. Bring water to a boil and cook until tender. 

Meanwhile, preheat Grill medium. 

Remove ribs from pot and place them on grill. Pour some barbecue sauce over ribs. Baste & turn frequently for  1/2 hours or until
well coated and almost falling off the bone.

BEER STEAKS

Ingredients:

4 beef steaks (rib eye , porterhouse, strip etc.)
2 to 3 tablespoons sea salt
2 to 3 tablespoons lemon pepper
1 to 2 (12 ounce) cans beer 
 

Directions: 

Rinse the steaks and place them in a large sealable container.
Sprinkle each side of the steaks with the salt and lemon pepper.
Gently pour the beer over the steaks (making sure the seasoning
doesn't wash off). Cover and refrigerate for 1 to 2 hours. 

Preheat grill for high heat. 

Lightly oil grate. Place steaks on grill and cook for 3 to 5
minutes per side or until desired  doneness is reached. 
                                                                           Makes 4 servings 
 

 NETTIE'S FILLED PINEAPPLE
UPSIDE DOWN CAKE 
2 tablespoons butter 
1/4 cup packed brown sugar 
1 can sliced PIneapple in syrup, drained & reserved 
1 can crushed Pineapple in syrup, drained & reserverd
1 Box of White Cake Mix 
1 pint Heavy whipping cream

Heat oven to 350 heat place butter in round pan. 9x1 1/2 inches, 
place in oven until melted. Sprinkle with brown sugar. Place 
sliced pineapples on top set aside.
Prepare cake mix according to directions with the exception of
replacing water for reserved pineapple juices that have been 
reserved and added enough water to equal the amount called for
on package.

Grease & flour 1-9X1 1/2" round pan.

Divide Cake batter between the two pans, the one with the pineapples
& the one you have greased & floured.

Bake according to package directions

Remove from oven Cool slightly, Flip cakes onto a cooling rack that
has wax paper placed under it . COOL completely

Meanwhile whip...heavy cream add 2 Tablespoon of sugar & whip until
stiff but not butter.
Divide whip cream into 2 bowls

Once cakes are cool.... Mix one part whip cream with
crushed pineapples & fill place on first layer of cake

carefully put pineapple topped layer on and frost sides with 
remaining whip cream.

Serve  DELICIOUS
 

GRILLED PINEAPPLE & BACON BURGERS

Ingredients:

2 pounds lean ground beef
1/2 cup prepared barbecue sauce(optional)
1 (8 ounce) can pineapple slices
8 strips lean bacon 

Directions:

Prepare grill for indirect cooking. 

In a large bowl, mix together hamburger meat and *barbecue sauce. Season with salt and pepper. 

Shape mixture into 4 large patties. Place a slice of pinapple
on top of each. Criss cross 2  bacon strips around each burger,
and secure with toothpicks. 

Brush oil on grate. Place burgers on grill over medium low heat.
Cook, covered, until the burger is cooked through. Turn often to
avoid burning the bacon.
