Nettie's Red Pepper Soup

2 Large Red peppers deribbed & seeded chopped
 1/4 cup onion chopped
 1/4 cup carrots chopped
 1 apple peeled cored and chopped
 1/2 jalapeno pepper deseeded and sliced
 1/2 bay leaf
 1  tsp garlic
 1 tsp Thyme
 1 ts sweet basil
 1 Tablespoon vegetable oil
 3 cups chicken broth
 1 cup heavy cream
  Garnish :   sour cream & parsley to garish
              salt & fresh black pepper to taste

 Add oil to a pan cook all vegetables and spices till onions are
 translucent (aprrox 5-7 min) over med heat.
 Add chicken broth, Bring to boil, reduce heat simmer with a lid for
 30 min (veggies should look tender). Remove from heat place in
 blender, blend till liquefied. Pour back into pan , add cream and cook
 over low heat for 10 min.

 Add salt & pepper to taste Garnish with blob of sour cream sprinkle
 with parsley.

 serves 6 - Soup is great served with Veal or Lamb
 
 

Mock Lobster Spaghetti Salad

2 bunches green onion  finely chopped
1 lb... imitation chucked lobster
         7 oz spaghetti noodles cut into thirds
 1 cup of Miracle Whip
 
 

                Mix together.... Let set overnight Serve..... Delicious
 

QT's Creamy Coleslaw
1 package (16 oz.) coleslaw mix
3/4 cup mayonnaise or salad dressing
1/3 cup sour cream
1/4 cup sugar
3/4 teaspoon seasoned salt
1/4 teaspoon celery salt

Place coleslaw mix in a large bowl.  In a small bowl, combine the
remaining ingredients.  Stir until blended.  Pour over the coleslaw mix
and toss to coat.  Refrigerate until served.  Yield 6 servings.

Bacon Spinach Salad

8 Slices of bacon, cooked to a crisp & drained
1/4 cup Italian Dressing
6 cups torn Spinach
1 small tomato, seeded & chopped
1/4 cup Mozzarella & Parmesan Italian style cheese
***optional: add cooked chopped eggs
green onion
sliced mushrooms

Place bacon & dressing in a small bowl, microwave
on high 30 seconds just until warm.
Toss dressing with spinach and tomato in a large bowl.
Sprinkle with cheese, season to taste with pepper toss lightly.
Serve immediately.
makes 8 side-dish servings
